Instructions
- Firstly, season the minced meat with paprika, aromat, black pepper, Worchester sauce, lazy garlic, salt and breadcrumbs.
- Delicately, roll the minced meat into small/medium sausages, keep in the fridge to marinate overnight.
- Season the lamb with a pinch of basil leaves, garam masala, turmeric, nutmeg, salt, onion salt, lazy garlic and breadcrumbs.
- Roll the lamb mince into small/medium sausages and marinate overnight.
- For the tomato and basil jam, add tomatoes, onions and lemon juice into a small pan. And cook it on high heat.
- Let the tomatoes thicken and add garam masala, chilli flakes and sugar. Remove off the heat once it’s got a jam-like consistency. Add thinly chopped basil and let it cool overnight in a jam jar.
- On the day of preparation, cook the lamb and beef sausages in the oven on low/medium heat.
- Slowly boil the peeled carrots till its a little soft on the outside, do not overcook it. Then, season the carrots with oil and Schwartz pork seasoning and a pinch of lazy garlic and fry in a pan till its crispy brown.
- Now for the toppings, cook the potatoes till crispy and put in a bowl to cool. For the coleslaw, mix the dry grated cabbage and carrots with mayonnaise, a tiny drop of mustard, a pint of salt and golden syrup.
- Fry the pancetta and let it cool in a small bowl. Dish the gherkins and tomato jam into a small bowl.
- Gently heat the brioche buns in the oven.
- Finally, it’s time to assemble the hotdogs.
- For the juicy lamb dog, put the lamb sausage into the brioche bun, add the spicy tomato & basil jam, then a spoon of red slaw, one pickled pepper, milky feta cheese chunks, some fresh dill and then drizzle the tzatziki sauce.
- For the tasty cheeseburger dog, put the beef sausage into the brioche bun, add some fresh lettuce, a creamy cheese slice, crunchy gherkins, savoury pancetta and squirt some classic tomato ketchup or burger sauce on top.
- Lastly, for my favourite carrot dog, put the carrot ‘sausage’ into the bun, add the yummy coleslaw, the crispy potato discs, the flavoursome croutons and a light drizzle of mustard
And you’re done! A delicious variety of hotdogs perfect for parties, Saturday nights in and any leftovers can be saved for lunch the next day, to show off to your colleagues lol. Prepare to be asked a lot of questions!x
Have a lovely evening foodies
